Simon and Monica Coulshaw identified the exceptional potential of Domaine des Trinites in 2006 and moved the family to the Languedoc after visiting and dismissing more than 100 unsuitable vineyard sites. A confirmed ‘terroirist’ and believer in the principals of biodynamics, Simon is already producing wines of outstanding quality at Trinites, located within the hills of Faugères and is amongst the first growers to bottle the newly created Coteaux du Languedoc Pezenas.

Made by British winemaker Simon Coulshaw and his Catalan wife Monica, a couple passionate about making high quality Languedoc wine in their vineyard in Roquessels. This Syrah, Grenache, Mourvedre blend is full of soft black fruits and spices, it has been shaped by the sunbaked rocky soils of the Languedoc hinterland. A herbal, bay and peppery spice bouquet is followed by youthful red cherries and supple mineral character derived from the schist rich soils.

Match with grilled Mediterranean vegetables, lamb cous cous, rabbit and white meats and cheeses.
